Fluffy Pavlova
This light and fluffy dessert is a staple of Australian cuisine. To make a pavlova, you’ll need:
- 4 egg whites
- 1 cup of sugar
- 1 tsp of cornflour
- 1 tsp of white vinegar
- 1 tsp of vanilla extract
Preheat your oven to 150C. In a large bowl, beat the egg whites until stiff peaks form. Gradually add the sugar, cornflour, vinegar, and vanilla extract, and continue beating until the mixture is glossy and stiff. Place spoonfuls of the mixture onto a baking tray lined with parchment paper, and shape into a circle or oval. Bake for 1 hour, or until the pavlova is crisp on the outside and soft on the inside. Once it’s cooled, top with whipped cream and your choice of fruit.
Homemade Lamingtons
These delicious squares of cake coated in chocolate and coconut are a classic Australian treat. To make lamingtons, you’ll need:
- 1 cup of butter, softened
- 1 cup of sugar
- 4 eggs
- 2 cups of self-raising flour
- 1 tsp of vanilla extract
- 2 cups of desiccated coconut
- 1 cup of icing sugar
- 1 cup of cocoa powder
- 1/2 cup of milk
Preheat your oven to 180C. In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the flour and vanilla extract. Pour the mixture into a greased 9×13 inch baking pan, and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely. Cut the cake into small squares. In a bowl, mix together the icing sugar, cocoa powder, and milk until smooth. Dip each square of cake into the chocolate mixture, then roll in the coconut. Allow the lamingtons to set before serving. Enjoy!
